A few weeks ago I did a post about Quick and Easy Weeknight Meals that a lot of people found helpful. I figured why not give some love to my non-carnivorous friends by suggesting some great vegetarian recipes too?  Here are 6 quick and easy vegetarian meals that are great for weeknight suppers and that leave leftovers for work the next day.

I strongly believe that if you’re going to eat vegetarian (and carnivorous even) you should eat as close to the source as possible.  I’m not a fan of fake meats and try to avoid eating a lot of tofu (soy can be controversial).  I’m all about veggies and grains.  Recipes with a cheese sprinkling or other dairy flourishes can sometimes be made vegan by omitting without sacrificing the entire dish.  And a good vegetable stock can stand in place of chicken to make it solidly vegetarian.

 Eat vegetables! Enjoy.

    Now that the heat of summer is gone, and I can cook more, I’m going to try a few of these. Especially the risotto – that is something that I never make, mostly because I’m lazy and don’t want to stand over a pot and stir all that time.
