		<description>This really is just that easy.  I like your idea of starting the ribs at a higher temperature.

The racks that I used actually came from a home canning kit that I have.  I bought a roasting pan big enough to accommodate the two of them and it worked out perfectly.</description>

		<description>Very nice.  I have to admit to being a rib philistine--if I&#039;m making them myself I wet-braise them a la Alton Brown--but this method looks easy enough to change my mind.  I might try starting the oven at a slightly higher temp (like 275) to get the smoke going sooner and then dial it back to 225 after the first half hour.

That&#039;s a cool looking roasting rack for this purpose.  Where did you find it?</description>
